Instructions
Ingredients:
2 cups prune plums (pitted) – about 1 pound
1/3 cup sugar
1/2 cup whipping cream
3 egg yolks
1 tsp vanilla
Pastry:
1½ cups all-purpose flour
2 Tbsp sugar
4 tsp cornstarch
3/4 cup butter, cubed
Mix together flour, sugar and cornstarch. Blend in butter with a pastry blender. Press into a 10-inch tart pan with removable bottom. Arrange plums in a circular pattern on the pastry, sprinkle all but 1 Tbsp sugar over the fruit and bake at 400°F for 15–20 minutes (until plums are softened). Meanwhile, whisk together cream, egg yolks, vanilla and remaining sugar; pour over fruit. Bake tart for another 25–30 minutes until set. Cool on rack.
