1 oz Sheringham Seaside Gin
½ oz Organic Fair Lavender Lemonbalm Lemonaid Soda Syrup
top with tonic

Method

Build ingredients in order over ice in a highball glass.


From humble beginnings comes big things—like an award-winning distillery in Sooke, which began in a garage in Shirley. Sheringham Distillery has come a long way since its early days, but Jason and Alayne MacIsaac are just as excited about their business now as they were when they first envisioned it. Their spirits are finely crafted and bottled in beautiful glass bottles reminiscent of prohibition-era moonshine bottles. Through their growth and success, they’ve stayed true to the heart of the business, showcasing a love for the West Coast and the stories of its people and land. 

Organic Fair makes all their small-batch products in Cobble Hill, carefully crafting flavours using spices, herbs and roots. All of their products are organic, gluten-free and vegan. Placing importance on making ethical business decisions, they choose natural ingredients that are fair trade or direct trade and GMO-free. Owner/operators Marisa and Kent Goodwin (along with their four children, two dogs and flock of chickens) take their inspiration from flavours around the world to help you create healthy and flavourful culinary experiences.
