Eton Mess

A delicious way to enjoy strawberries is Eton Mess, a simple and great summer dessert. Legend has it that a pastry chef at Eton (a well-known boarding school in London) dropped a neat Pavlova during service, and then picked it up and served it just as it was, broken meringue and all.

Ingredients

  • 3 cups whipping cream
  • 1 vanilla pod
  • 2 Tbsp white sugar
  • 1 basket/punnet fresh ripe strawberries
  • 2 large or 4 small meringues

Instructions

Hull the strawberries, cut them in half and mix in a bowl with the sugar, slightly breaking the strawberries up with your hands. The end result should be macerated (gently crushed) strawberries with incorporated sugar. You might end up with some juice in the bowl, which is fine. 

Add cream and one scraped-out vanilla pod to a large mixing bowl. Using the largest whisk you have, whip the cream until it forms stiff peaks.

Roughly crush the meringue so that you end up with variously sized pieces. Put the meringues into the bowl of cream. Pour in the strawberries and gently fold it (you are not trying to mix completely). 

Serve and enjoy Eton Mess family style or plated individually and garnished with mint.
