Fishing Village

You can’t go to the West Coast of Vancouver Island without someone saying “If you go any further west, you’ll end up in Japan.” This cocktail casts out a line to bring Japan a bit closer by combining the Japanese-inspired sake with local ingredients from the former and current fishing villages of Ucluelet, Esquimalt and Granville Island.

Instructions

INGREDIENTS

2 oz Pacific Rim Lighthouse Gin
½ oz Esquimalt Wine Company Rosso Vermouth
¼ oz Osake Junmai Nama Sake
¼ oz pomegranate syrup (equal parts unsweetened pomegranate juice and sugar)
2 dashes Rootside Aromatic-ish Bitters

METHOD

Combine all ingredients in a mixing glass, then fill with ice to just above liquid level. Stir gently with a bar spoon until chilled (about 10–12 seconds). 

Double strain into a chilled, stemmed cocktail glass and garnish with an orange peel.
