INGREDIENTS
1½ oz Merridale Spirits Cowichan Spiced Rhumb
1½ oz pure apple cider (store bought or using recipe below)
½ oz fresh juice
½ oz thyme simple syrup
1 oz Sea Cider Rumrunner
METHOD
Shake all ingredients except Sea Cider in an ice filled shaker. Strain into Collins glass. Top with Sea Cider and garnish with dehydrated apple and sprig of fresh thyme.
Thyme Simple Syrup
Simmer a fresh bunch of thyme in 2 cups of water for 5 minutes, then add 2 cups white sugar. Stir until sugar is dissolved, then remove from heat and let cool to room temperature.
Slow Cooker Apple Cider
INGREDIENTS
8 gala apples cored and quartered
4 sticks cinnamon
1 Tbsp whole cloves
1 tsp whole allspice
10 cups water
METHOD
Place your quartered apples into a slow cooker. Add in cinnamon sticks, whole cloves and allspice and pour in the 10 cups of water. Cook on high for 3 hours.
Mash the apples with a potato masher. Cook an additional 1–3 hours on low.
Strain the solids from the liquids. Discard solids and store liquids in an airtight container for up to 1 week.
