Honey Lime Prawns

Spring is spot prawn season on Vancouver Island. Honey pairs well with spot prawns and makes a nice sweet and sticky marinade with lime juice, garlic and cilantro.

Instructions

Ingredients

1 lb spot prawn or shrimp tails, shelled
⅓ cup honey
⅓ cup lime juice
2 Tbsp olive oil
2 Tbsp finely chopped cilantro, plus more for garnish
2 minced garlic cloves
¾ tsp salt
¼ tsp ground black pepper
¼ tsp paprika
¼ tsp hot pepper flakes, optional (or jalapenos)

Method

Preheat grill or broiler to high.

Combine all ingredients—except prawns—and mix well. This is the marinade and dipping sauce.

Pour half of the marinade over shelled shrimp and let sit 15–20 minutes. Place on a baking sheet, or skewer if you’re using the grill. Cook prawns in grill or under broiler approximately 2 minutes, just until opaque.

Remove and serve immediately, either alone or over salad greens, with extra sauce to dip.
