Ingredients
1 cup diced onion
½ cup diced carrot
½ cup diced celery
1lb diced bacon
½lb ground beef
½lb Italian sausage
50ml tomato paste
570ml crushed tomatoes
2 Tbsp chopped garlic
400ml water
100ml light cream
1/4 cup chopped fresh parsley
1½ tsp dried thyme
1½ tsp dried oregano
1 tsp chili flakes
1½ tsp dried basil
salt, pepper to taste
Method
Measure first and then blend individually the first four above ingredients in food processor. Don’t overload the processor, especially with the bacon. The bacon we want to be finely chopped not pureed.
Brown ground beef and sausage in large pot. Once cooked, scoop out of pot and strain excess fat. In the same pot, sauté vegetables and bacon until soft. Add garlic and spices and cook for 5 minutes. Add ground meat back into pot and add all other ingredients EXCEPT for cream and parsley. Simmer on low for an hour or so. Turn off heat and mix in cream and fresh parsley and adjust seasonings.
