Kinsol Cup

Hot Summer days and freshly picked blackberries have us craving this refreshing cocktail, named after the historic Kinsol Trestle in the Cowichan Region. A modified version of the Pimm's Cup, we use local blackberry gin and ginger beer to give is an Islander's edge.

Ingredients

SERVINGS: Serves 1
Cocktail
  • 1 oz Stillhead Wild Blackberry Gin
  • 1 oz Pimm's
  • 1/4 oz Simple Syrup
  • 1 oz Lemon juice
  • Ginger beer

Instructions

Use a highball glass. Shake first 4 ingredients, then strain over fresh ice. Top with ginger beer. Garnish with a mint sprig, blackberries and cucumber slice.
